Crockpot Soup and Biscuits

Happy Friday!  I have two delicious and super easy recipes to share here today.  It’s been a little chilly and rainy this week in SoCal, which feels odd and wonderful at the same time.  What goes better with a rainy day then some warm homemade soup and biscuits?!

Let’s start with the soup.  The original recipe can be found here.  This recipe reminds me a lot of a homemade potato soup my mom has always made, except that its extra cheesy, and a little easier to make since the crockpot does most of the work ;-)  For our soup I used about 3/4 of the white onion, and instead of using 4 cans of potato soup, I used 2 cans potato, 1 can cream of mushroom, and 1 can of cheddar cheese soup.  Also, since I used the cheese soup I only added in a small handful of the shredded cheddar cheese, instead of 2 cups.  Looking back I would probably just eliminate the shredded cheese completely.  I would also recommend adding more bacon if you’re a bacon lover like us.  8-10 pieces would probably be good since this is such a large serving of soup.  Also, the 3-4 hours cook time was definitely not long enough to soften the potatoes.  Ours was pretty perfect after about 5 and a half hours.

Now for the biscuits . . . oh my goodness are these delicious.  I followed this recipe by Brown Eyed Baker exactly how it’s written, and they were perfection.  Perfectly browned, perfectly seasoned, perfectly delicious.  If you’re familiar with Red Lobster then these will taste very familiar.  O was impressed and that’s really saying something because he’ll go to Red Loster just for the biscuits!

So there you have it!  A super easy meal that doesn’t have a lot of prep time, but that you can enjoy smelling and anticipating for hours while your crockpot is cooking away.  Hope you enjoy!
